This one might be my favorite scaled dessert yet.

My grandmother used to make rhubarb upside down cake and thankfully for me my dad grows rhubarb.

So I decided to scale her recipe to give it a try.

Here's my small batch rhubarb upside down cake recipe:

6 inch cake pan

Topping
3/4 c brown sugar
3/4 - 1+ cup rhubarb, cut into 1/2-1 inch pieces (enough to fit tightly in your pan)

Cake recipe
6 TBSP butter
1/3 + 1 TBSP sugar
1 egg
3/4 c flour
1 TBSP corn starch
Salt
1/2 tsp baking powder
6 TBSP whole milk
1 tsp vanilla
1 TBSP sour cream

In bowl, beat together butter and sugar until fluffy. Add in egg, beat until mixture is smooth. Add in remaining ingredients and store until combined. In greased 6 inch baking dish, sprinkle out brown sugar. Arrange rhubarb on top. Fit as much rhubarb as you can in one layer. Pour cake batter over. Bake for 25-30 minutes at 350. Remove from oven and let cool ten minutes. Run a knife along edges and then flip on to serving plate.
