One of my favorite ways to save money on groceries is to think of recipes as flexible instead of fixed. Pesto is a perfect example. 🌿 This batch uses basil from my garden and a lemon from my neighbor’s tree. Instead of pricey pine nuts, I used sunflower seeds, which are much more budget-friendly and just as delicious. Don’t have sunflower seeds? Walnuts and pumpkin seeds work really well too. No basil? Try arugula or spinach instead. You can make a delicious pesto with whatever you already have on hand. I love tossing it with roasted vegetables and tofu for an easy meal, and whenever I make pesto, I always double or triple the batch. It freezes beautifully, so I have homemade pesto ready whenever I need a quick dinner. Sometimes saving money isn’t about giving something up.
