This is a twist on a classic.

I was craving a snacky dinner… and an easy one, too.

So I made a one-portion egg salad – but it’s not your everyday egg salad.

Here’s my single-serve Asian egg salad recipe

2 hard boiled eggs
1 TBSP kewpie mayo
1 tsp sriracha
1 tsp soy sauce
1 tsp honey
1 tsp Dijon mustard
Garlic powder
Onion powder
Dried chives (or green onion, I just didn’t have any)
Salt
 
Mix/ mash together all the above ingredients in a bowl. This will have a looser consistency. It will stiffen up in the fridge. I refrigerated for at least 30 minutes. If you want it to be thicker, you could also do a little less mayo. Eat with crackers or your choice of dipper. I chose ritz!
